OLD FASHIONED BANANA BREAD

So you have some bananas sitting in the fruit bowl getting old and no-one wants to eat them because the skin is turning black? Perfect for making this simple old-fashioned recipe thats sure to be a crowd pleaser.


Prep Time: 15 minutes
Cooking time: 1 hour
 
Ingredients:
  • 125g butter or margarine
  • ¾ cup sugar
  • 2 eggs, beaten
  • 1 t vanilla essence
  • 1 t bicarbonate of soda
  • Big pinch of salt
  • 3 tablespoons soured milk (normal milk works just fine)
  • All your overripe bananas (at least 3, but more is fine), mashed up
Method:
  1. Preheat oven to 180O Celcius.
  2. With an electric beater, mix together the butter and sugar till a nice creamy consistency.
  3. Add the egg and vanilla and milk, then the dry ingredients and mix well.
  4. Lastly mix in the banana.
  5. Spoon the mixture (its quite thick) into a loaf pan (although you could use any baking tin you have - who says it has to be a loaf?)
  6. Bake for one hour. A skewer inserted into the loaf should come out clean.
  7. Turn it out onto a rack to cool for a few minutes.
  8. Best eaten hot with lashings of butter!
